I talk a lot about meal planning — because it’s something I do every week in an effort to simplify one of the busiest times of the day for our family.

I absolutely hate wondering ‘what’s for dinner’ — especially when it’s already 5:00 and everyone is hungry. By this point, it’s too late to defrost something, it’s too late to go to the store for ingredients, and it’s almost to late to make anything that requires prep work. So instead of saving money {and a lot of calories} it just seems easier to go out to eat, get fast food, or make an expensive overly-processed frozen meal from the store.

Sound familiar?  I’ve been there… more than I’d like to admit! 

Thankfully, meal planning helps me to not only plan ahead, but also to make sure I buy the appropriate items from the store, defrost certain ingredients the night before, and save a whole bunch of time, money, wasted food, and stress!

I used to just write our weekly meal plans in my planner, but then everyone would always ask me what we were having for dinner. So when I got the Scrummylicious Meal Planner from the Victoria Chart Company, I immediately posted it on our fridge so everyone could easily see what’s for dinner each night of the week.

So far, I’m a huge fan of his ultra-simple meal planning chart. There is plenty of writing space for each day, so I often write down different meetings or events we have as well — and there is a big blank area at the bottom where I list any items I need to buy on my next grocery shopping trip

I’ve really benefited from using this handy chart, so I’m excited to give TEN of them away today!

    Meal planning feels overwhelming because I have difficulty finding easy, quick recipes. Plus due to a recent surgery I have to make sure my diet is low fat and it seems even more difficulty to find easy, quick recipes now.

    My biggest meal planning challenge is choosing too many recipes that are new or require lots of preplanning and shopping. Then I find I forgot to get this or that ingredient while grocery shopping, and end up doing the last minute tried and true (but often boring) dishes.

    My biggest challenge to meal planning is actually following through. I will plan the meals and usually buy the ingredients, but then during the week I’m so tired I just don’t feel like sticking to it.

    I love whenever I do plan the menu for the week, but I often let it slide when other things piled up on my list… With a planner that can be posted on the fridge/wall staring at me, hopefully it will help me get on track every week!

    Have been reading your blog for a while, and really like the ideas you shared with us. Tried a few home cleaning recipes, the shower cleaner and the fabric softener didn’t quite work for us, will leave a separate comment in those posts.

    My biggest challenge is sitting down and planning the meals. I have a husband who doesn’t want to eat many of the meals I want to plan so it makes it difficult to motivate myself when I know he’ll not want to eat a lot of them. He could eat homemade pizza and chicken sandwiches every day and I’d like a bit more variety.

    My biggest challenge when cooking meals is to keep track of everything that I’m making. My fiance is on Weight Watchers, and it can be hard to concentrate on that.

    Our biggest challenge for meals is coming up with healthy, cheap meals for our kids who go in and out of “picky” stages. What a great idea for a menu planner!

    My biggest challenge with meal planning is trying to create a weekly menu that my husband (who is a picky eater) will enjoy and that will be low-fat, delicious, easy and quick to prepare, and budget friendly. Oh, and that uses a variety of foods and different recipes. I don’t expect too much…not really. ;)
